The first major fund-raising venture undertaken by the Angels of Easter Seals was a Spring Fashion Show Gala in 1977, which, over a 25-year period, has become a staple, generating $454,500 for Easter Seals projects. Projects that have ensued are:
In 1981 the group compiled and published a cookbook, "Angels and Friends Favorite Recipes," which is now in its 11th printing and has generated over $275,000.
In 1986-87 the Angels cooperated with Giannios Candies to sponsor a Ton of Love Chocolate Bunny Raffle, garnering $20,500.
Initiated in 1987, "The Magic of an Angels' Christmas" community-wide Festival of Trees opened the holiday season, and in the six years to follow the project raised some $300,000.
In 1991 the "Angels and Friends Favorite Recipes II" cookbook was published, and by its fourth printing, with the sale of nearly 34,000 copies, the proceeds climbed to $130,000.
1994 saw the concept of the "Magic of an Angels' Christmas" change to a one-night event that raised $60,000 the first year and over a nine-year period has raised $620,000.
In 1999 a Holiday Brunch and Sweet Shoppe was introduced and raised $18,000.
In 2001 the Angels published another cookbook, "Party Favorites," to commemorate 50 years of service by Easter Seals and 25 years by the Angels. With the sale of 9,000 copies, $45,000 was raised.
During the past 26 years the Angels also sponsored gourmet dinners, theater parties, auctions and other events, raising their total from fund-raising activities to $1,868,000.

A recipe from "Angels and Friends Favorite Recipes II" cookbook was selected as a Recipe Hall of Fame winner.
Provolone Chicken
5 boneless, skinless chicken breasts, cut in medium bite-size pieces, flattened
3 eggs, beaten
Seasoned bread crumbs
1/4 cup butter
8 ounces fresh or canned
mushrooms, sliced
1 cup chicken broth
6 ounces white wine
1/2 pound provolone cheese,
grated.
Marinate chicken in eggs; drain each piece and roll in bread crumbs. Brown in butter until lightly brown on both sides. Transfer to a 9x13-inch casserole, layer in row, overlapping pieces.
Saut & eacute; mushrooms and arrange over chicken. Add chicken broth, wine and cheese. Bake, covered, at 350 degrees for 30 minutes. Uncover and bake 15 minutes longer. Serves 8.
