MAHONING VALLEY HISTORICAL SOCIETY’S “RECIPES OF YOUNGSTOWN-VOLUME 2”
mike’s vegetarian chili

2tablespoons cooking oil
2cups chopped celery
2cups chopped green pepper (two)
2cups chopped onion (three medium)
3cloves garlic, minced (jar kind)
228-ounce cans diced tomatoes, not drained
216-ounce cans red kidney beans, rinsed and drained
1/4cup red wine vinegar
1tablespoon chili powder
2teaspoons dry parsley
2teaspoons salt
11/2teaspoons dried basil, crushed
11/2teaspoons dried oregano, crushed
11/2teaspoons ground cumin
1teaspoon ground allspice
1/4teaspoon black pepper
1/2teaspoon bottled hot pepper sauce (Frank’s)
1bay leaf
112-ounce can beer (11/2 cups)
3/4cup raw cashew nuts
Heat oil in dutch oven. Add celery, green pepper, onion and garlic. Cook, covered, until vegetables are tender but not brown. Stir in undrained tomatoes, drained beans, vinegar, chili powder, parsley, salt, basil, oregano, cumin, allspice, pepper, black pepper, hot sauce and bay leaf. Bring to a boil. Reduce heat and simmer covered for at least one and one-half hours. Stir in beer and cashews. Return to boiling and simmer uncovered 30 minutes more, or until chili is desired consistency. Remove bay leaf. Makes six or more large servings. Serve as is or over rice.
peanut cream dressing

1cup light cream
1/2cup creamy-style peanut butter
1tablespoon honey
1/2teaspoon salt
In a small bowl gradually blend cream into peanut butter, stirring until smooth. Add honey and salt; mix well. Delicious with fruit salad. Suggested fruits: bananas, cantaloupe, kiwi, nectarines and strawberries.
