Stuffed Pork Chops with Apples

3tart red apples

6rib pork chops (11/2 inches thick)

1cup fine bread crumbs

1/4cup chopped celery

1tablespoon fat

few sprigs parsley, chopped

1tablespoon minced onion

11/2teaspoon salt

pepper

For the stuffing: Cook the celery, onion and parsley in the fat for a few minutes; ad crumbs and seasonings and mix well. Cut a pocket in each chop by slicing from the outer edge toward the bone. Sprinkle chops with salt and pepper and rub lightly with flour. Sear chops in a hot skillet, then fill each with stuffing and skewer the edges together with toothpicks. Lay the stuffed chops on a rack in a baking pan with a cover. On the top of each chop, place, cut side down, half an apple which has been cored but not pared. Cover and bake in a moderate oven for about 45 minutes or until meat is tender. Lift the chops and apples together from the baking dish onto a hot platter, remove the toothpick skewers and serve at once.

Peanut Butter Fudge

2cups peanut butter

2cups granulated sugar

1/2cups sweet milk

1/2teaspoons vanilla

Cook together sugar, peanut butter and milk. When it forms a soft ball in cold water, remove from fire, add vanilla, cool and beat until creamy. Pour onto a buttered plate and, when it begins to harden, mark into squares.
