2 vie to operate Mill Creek Golf Course restaurant

Leaders of Mill Creek MetroParks are considering two proposals from potential operators of the Hole 55 Grille, the restaurant at the park’s golf course.

Bruce Paulette of Youngstown, and David and Mary Stana of Youngstown submitted applications to run the restaurant, which previously was operated by Barry Dyngles Pub. The park system terminated its contract with Barry Dyngles after the business reportedly fell behind on rent.

The Metroparks put out a notice seeking applications earlier this month, the deadline for which was April 16. Golf Director Brian Tolnar said previously that he would like the restaurant to be running by May 1, the week when leagues start.

Applicants outlined their respective business plans in the submitted proposals.

Paulette, who says he has previous experience with restaurant and golf operations, proposes daily hours from 6 a.m. to 8 p.m. The proposal outlines the menu, which would include hot dogs, burgers, grilled chicken, sandwich combos, breakfast options, “at least” one daily lunch and dinner special and snack foods.

The other application, submitted by the Stanas of Valley Grille LLC, highlights the applicants’ experience as operators of a catering company since 2002. The proposed menu includes a few breakfast items, sandwiches, burgers, a grilled chicken wrap, salads, chicken tenders, hot dogs, wings and other similar fare. The proposed prices range from $2.99 for sides to $9.99 for a Cuban sandwich.

The restaurant operator also would be responsible for beverage and snack carts on the north and south courses, and catering golf outings.

“We think it’s a pretty lucrative opportunity, especially with the outings we have,” Tolnar said previously.

The course, which now is open for the season, hosts about 30 outings each year and has about 30 leagues that play there.

The applicant awarded the contract will pay monthly rent, at minimum, of $2,000. The beverage commission minimum required by the park system is 20 percent.

“We’re in the process of looking them over,” Tolnar said of the proposals.

The board of commissioners must vote to award the contract.
