So you have prepared too much pork roast for your holiday dinner. That's OK, there are many different ways to enjoy the leftovers -- in sandwiches, salads and pasta dishes.
Here are some delicious ways to enjoy leftover pork roast this holiday season:
Mince leftover pork and mix with cooked leftover potatoes for a hear1y breakfast hash.
Dice chilled leftover pork roast or tenderloin and toss into a main dish salad with cooked green beans, cherry tomatoes, and potatoes and chopped lettuce. Dress lightly with a lemon vinaigrette.
Cube leftover pork roast, skewer on toothpicks and serve with honey-mustard for dipping.
Slice leftover pork roast and heat with your favorite barbecue sauce and serve on sandwich buns.
Cube pork roast and simmer with a can of meatless chili or stew for a hearty meal and serve with cornbread.
Spread a flour tortilla with a little cream cheese and horseradish, top with thinly sliced leftover pork roast and alfalfa sprouts. Roll up for an on-the-go sandwich.
