HELOISE Recipes that will warm you up to cold soup



Dear Readers: What is made with chilled sparkling water, papayas and freshly squeezed lime juice? I'll bet you are thinking this is a tropical drink.
Guess what? These ingredients are the makings of a fabulous chilled soup. The recipe is perfect for those days when you don't want to heat up the kitchen -- just heat up the conversation with this "cool" soup. Here's the recipe for Sparkling Papaya Soup:
2 large, ripe papayas, peeled and cut into large cubes
3/4 cup plain low-fat yogurt (nonfat won't work)
1/4 cup freshly squeezed lime juice
1/4 cup honey
1 cup sparkling water
4 mint sprigs for garnish
Place the papaya, 1/2 cup of the yogurt, lime juice and honey in a food processor, reserving some of the papaya for garnish. Blend until smooth. Add 1/2 cup sparkling water and continue until blended. Keep chilled until ready to serve. Just before serving, add the remaining sparkling water and mix well. Garnish each serving with several papaya cubes, 1 tablespoon yogurt and a mint sprig. Makes 4 servings.
Spin-off: Blend leftover soup with crushed ice for a great drink!
To sass up other soups:
UAdd croutons, dumplings, won tons or noodles to clear soups.
UAdd a dollop of sour cream, yogurt or chopped herbs to cream soups.
UAdd grated cheese, chopped hard-boiled eggs or lemon slices.
UServe them inside a round, hollowed-out bread or a cabbage head.
